Sausage, egg, and cheese biscuit recipe

Biscuit Ingredients:
1. 4 cups of self-leavening flour
2. 1 tablespoon of Granulated Sugar
3. 1 tablespoon of Baking Powder
4. ½ tablespoon of Salt
5. 1 cup of Shortening
6. 1 egg
7. 1 ½ - 2 cups of buttermilk

Other items needed:
1. 1 lb. Jimmy Deans hot pork sausage
2. 1 pack of processed cheese
3. Some eggs
Biscuit baking directions:
• Preheat oven to 450°F
• HEAVILY grease cookie sheet with shortening; I am talking HEAVY! Sprinkle some salt onto greased cookie sheet (just a little bit of salt).
Combine flour, sugar, baking powder, salt in a large mixing bowl. Cut in Shortening. Beat the egg and pour ½ of it into the mixture. Gradually pour in buttermilk and use hands to mix until dough is thick and sticky, DO NOT OVER MIX. Let dough sit for 15-20 min. Transfer dough onto floured surface, sprinkle flour on top (NOT A LOT), and kneed for about 45 seconds—DO NOT OVER KNEED.
Roll out to about 1/2”-3/4” thick. Cut out circles with a large cup or something circular. Place cut-out biscuits onto prepared cookie sheet. Place on top oven rack and bake for about 10 minutes, or until biscuits are starting to turn golden.

Preparing a Sausage, egg, and cheese biscuit:
As biscuits are cooling, create sausage patties, cook covered on stove. Once cooked, take the other half of the beaten egg, and cook covered in the sausage grease. You don’t want to scramble, just leave it to cook as it fell in the pan. If you are making several sandwiches, you will want to beat some additional eggs.

Fork open one of the biscuits, stack sausage, egg and cheese inside, and enjoy!

I was introduced to these jeans by Alena Kelly back in college. I would steal her pair all the time. These jeans are AWESOME!!! Whenever I wear a pair, I feel like a million bucks.

I've had the same tube since FOREVER. This stuff is fresh, soothing and SUPER shiny!

5. Petunia Pickle Bottom Diaper Bag

This was my one splurge for baby things. I love this diaper bag because it is functional as a diaper bag but also very cute.

6. Ina Garten, "Barefoot Contessa"

I love to watch this lady cook. She inspires me to try new things in the kitchen.

7. Journal Writing

I love to get my thoughts down on paper. I especially love being able to look back and learn about myself from past entries.

8. Clinique High Impact Mascara

I have used this mascara since high school. I'm completely sold. An overall solid mascara that I can count on.

I could spend hours and hundreds in this store.

This was my birthday gift last year from my husband. What a great gift! I love how cozy and warm they are.

City Life

Nick, Boston and I moved from Orem to the heart of Salt Lake City! We moved to be closer to Nick's work. So far, so GOOD! We are enjoying the new apartment and scene. We like being in the city, so close to SO many things. We LOVE the fact that Nick's work is only 5 minutes away. Salt Lake City is a great place although very different from Orem/Provo. With Nick at work during the day, Boston and I have the opportunity to explore downtown a little bit. We have discovered a few gems...(for a young, stay-at-home-mom with a shopping fetish and a sweet tooth).

1. Q Clothing- Very cute clothing boutique, and only a few blocks from our apartment.
2. The Gateway- Lots of shops, attractive setting.
3. Got Beauty- Great salon and beauty store.
4. Gourmandise Bakery- Delicious goodies.
5. Sweet Tooth Fairy- Bakery shop with stellar cupcakes (although not as good as "The Chocolate" in Orem).

Hello friends and family!

Man, It's been a long time since I updated this blog. A lot has happened to our family since our last post.

Nick began his last and final football season as a BYU cougar. We are a little sad to be ending our BYU football experience but are very excited for the final season and hope Nick has a great one. Nick also just began his last semester at BYU as a Business: Finance major. He is working very hard and staying very busy! Go Nick!

I graduated from BYU! It was a mad dash to the finish. I am glad to be done so that I can focus my time on being a wife and mother. I love being a stay-at-home mom.

Boston is such a joy to our family. Boston has grown so much!!! He is still measuring tall for his age. He has learned how to roll over, grasp toys and objects, laugh and play games like peek-a-boo. He likes being outside, going on walks, reading books (with mommy), singing songs, and playing with toys. Ahh...he is such a sweetheart.

Summertime Plans

Nick and I have a FULL summer planned. Next weekend we are going to Park city for the weekend to celebrate our wedding anniversary. The weekend after that we are driving to Colorado for a super fun Alletto family reunion. The weekend after that we are driving to Wyoming for to celebrate the Fourth of July with Nick's family. THEN, the next week, Nick and I are driving to California for the Maughan Family Reunion (my mom's family). All the while, Nick will be in football training and I will be in school (full-time).YIKES!!! As fun as all of these plans sound, I am a little nervous for a coupe of reasons.
1. I don't want to fall behind in school (and I'm sure Nick doesn't want to loose any stream in football).
2. Driving with a 2 month old baby for hours does NOT sound very easy or fun.

However, I am determined to have a good summer and enjoy all of the fun activities coming up for our family.

Nick and I are so happy to have Boston Carpenter Alletto with us. He was born on April 8, 2010 at 4:40 pm. We weighed 7 pounds and 13 ounces and was 20.5 inches long. He was measured again at 4 weeks and was 10 pounds 8 ounces and 22.5 inches long. He is a DREAM baby. He sleeps and eats well and has such an easy temperament. We love him to bits!!!

Canyon Drive

With Football Season upon us, Nick and I really don't have a lot of time together. Last weekend, BYU football had a bye week which meant that we got to spend the whole weekend together!!!! It was great!!!! On Saturday, we prepared some hot chocolate, packed a blanket and headed up to the mountains. We found a great lookout spot and set up shop on Nick's truck tailgate. We enjoyed the views, the hot cocoa and the company. I love him :)

Heber Creeper/Pumpkins

Halloween was fun for Nick and me this year! A few days before Halloween, we carved pumpkins. It was fun to spend time together!

On Halloween Eve, we took a spooky ride on the Heber Creeper with Jean, Chris and Scott and Heidi Emmitt. It was a 40 minute train ride into the Provo Canyon and back. The train was very old (rust had eaten away at the steel floor in some places) and decorated in true Halloween fashion. The conductor of the train (or, in other words, an audio recording)told creepy ghost stories that supposedly took place in the canyon many years ago. Scary ghosts haunted the train during our ride; they walked up and down the aisles of the cars and tried to scare people (I think the only person scared in the whole train was me).

Happy Birthday, Nicky!

Today is Nick's 24th birthday!!! We enjoyed spending time with family; Jean, Chris, Dan, and Terrance came and celebrated with us. We ate dinner (fajitas...Mmmmmm!) and then had cake and ice cream.
(We only had nine candles...oops.)

After cake and ice cream, we all went to the park and played Bocce Ball. It was very fun!

Baby News

Well...I guess it's time that I publicly announce that Nick and I are expecting a little one! We are very excited. I am currently 12 1/2 weeks along and am just exiting the "sick and tired" phase (THANK GOODNESS! The last month or so has been very hard. I was very nauseous all day everyday).

I am due April 13, 2010. This could be a little tricky as April 13 is the last day of winter classes and a few days before finals. Yikes. I will pray for flexible professors who will let me take finals a little early :)

I heard the baby's heartbeat today and it was amazing; the doctor said the beat sounds healthy and strong. Nick and I will try to keep y'all posted on future baby news!

New Place

Nick and I survived the move (barring a few lost items during transit) and we love the new place. We now live in Orem in a beautiful basement apartment. We feel 'at home' and look forward to many memories in this new place!

Hello everyone!

I cannot believe that the summer is almost over. School starts on Monday. Yikes! Nick and I have had a pretty full summer. Nick has been busy with football. He is working really hard and is ready for the teams first game against Oklahoma. Go Cougs! It has been great to have his little brother Terrance on the team this year. I have been working at the BYU library. Nothing new to report there.

Nick and I purchased a new-to-us truck!!! It is a '91 Ford F-150 Lariat. We got a great deal and that's a good thing because we have had to do some pretty significant repairs on the engine. Nick loves the truck (he actually fits inside)!

We are moving to Orem on Friday! Although the process of moving is stressful, we are very excited to get a bigger place.

Here is one of my favorite cookie recipes. They are called:

Crinkle Cookies

1 pkg. of Chocolate Cake Mix
1/2 c. Oil
2 Eggs

Mix ingredients together; Take small amounts of dough and roll into a ball (maybe the size of a golf ball...maybe a little smaller); roll the ball in a bowl of powdered sugar and place on greased cookie sheet.

Bake at 350 degrees F for about 12 minutes...OR until center is set.

ENJOY!!!

Spring is here...almost.

I love spring weather. In Utah, it makes an occasional stop in between snow and rain storms :/ Funny how the weather here cannot make up its mind. I anticipate the warm weather to stick one of these days.

Nick and I started Spring classes today! I am taking a two classes for my major(Adolescent Development and Parenting & Child Guidance) and one general education class (Music 101) this term and Nick is enrolled in Accounting and Fly Fishing. Here we go again!

Nick has enjoyed our short stints of warm weather by fly fishing on the Provo River. No fish yet, but we are confident that a nice fish dinner is on the horizon. :)

I have been home from the hospital for a couple of days and there have been a lot of things to do. Krista and I have been very occupied with final exams; Krista finished her's on Saturday (LUCKY!!!) I still have two that I will be studying for and taking on Monday and Tuesday this coming week.

Today I talked to my mom on the phone and found out that she has been keeping many family and friends updated with what has been happening with me, especially with the events of the last few days. Also after talking to my mom, I feel a strong desire to iterate my thoughts and experiences to you so that you can feel how thankful I am for your sacrifices, your love, and your support for me.

First, I thought I would take a moment to tell you a little bit about what happened last week. On Tuesday afternoon I began having severe abdominal pain that at first I thought was only a reaction to something I ate. I realized that my problem was probably a little bit more serious than I originally assumed when I noticed growing amounts of blood in my stool. That was a little bit disconcerting but after I talked to one of the trainers on the football team, I thought that I would be OK without going to the hospital; however, as the day went on, those symptoms continued to worsen. Finally at about 12:30 that night Krista and I went to the ER.

After two visits to the ER, a night in the hospital, and a colonoscopy (and the worst part about that was drinking a gallon of some sort of laxative to clear out my intestine! I don't recommend it), the doctors are now relatively certain that I have Crohn's disease. I guess I can't say that with complete confidence since I haven't gotten the results from the biopsy yet.

But as this new challenge arises in the lives of my family and me, an even stronger force of love has been poured out to us in the form of angels.

Mormon taught that "God knowing all things, being from everlasting to everlasting, behold, he sent angels to minister unto the children of men, to make manifest concerning the coming of Christ; and in Christ there should come every good thing." It has been my experience in the past, and certainly in this instance, that angels are sent by Heavenly Father to help his children to find joy in this life. The Lord's angels are both sent from his presence, as well as from among us. Later in the same chapter, Mormon teaches that "it is by faith that miracles are wrought; and it is by faith that angels appear and minister unto men." I believe that the faith that Mormon is talking about does not just come from the person needing the miracle, but also from the angels themselves, as those angels are often fellow people who live with us on earth: Family members, friends, and anyone who exercises his faith to help another.

Because of many ministering angels, the most prevalent feeling that I have had for the last few days is gratitude. I want you to know how much you have helped me and how much I appreciate your kindness. Such selflessness and lenity does not go unnoticed. I know that your love, kind words, prayers, and fasts have helped buoyed my heart and cheer my soul. I also know how grateful my parents and family are for your support.

As the semester comes to a close...

Well, this has been a pretty good semester; Krista and I have thoroughly enjoyed our first winter as a married couple. Needless to say, it was certainly better than last winter! haha

The weather is finally beginning to heat up a little bit here in Provo. I have been keeping a close eye on what has been going on in California and Denver and I must say that I have been mostly jealous about how things have looked there in comparison to here. At least this week is going to be warm (even though it will also be wet...darn it.)

Krista and I are just getting ready for finals now, and finishing up the final touches on the big end-of-the-semester-projects that are always inevitable. I think we are going to make one final "hurrah!" in the Library on Saturday to finish up some papers and ultimately turn our focus from school work to final-exam preparation. woopie.

Fortunately, finals are not looking too daunting this semester. I asked Krista if she was worried about any of her finals and her confident reply was "not really." As for me, I feel pretty good about finals as well. Probably not as confident as Krista, but I have come to the decision after three years of college that all I have to do is study a little bit, then take the final, and then just forget about it because the grades usually take care of themselves as long as I just put in the time. I don't know if this is a good realization, or just a resignation, but either way I am going to be really happy when I finish that last test. I am sure that Krista will too :)

Football has been going well, with one minor glitch: I tore my MCL in practice a week ago so I won't be able to finish out the practices. Luckily it was only an isolated MCL tare and nothing happened to other, more vital parts of my knee, such as the ACL, PCL, or Meniscus. The final verdict? I am out of practices for a couple of weeks, and I am rehabbing my knee so that I will be 100% by the end of June. I should be absolutely great when Fall camp rolls around, so that's all that really matters!

We had a visitor this week. Bryce Carpenter (Krista's older brother) is on his way to BYU-I and he stopped here for a few days to spend some time with us as well as a "special someone" who is attending school here. Actually, I have a feeling that the visit was more for her all along, but it was still really fun to have him with us these last couple of days.

Well, this Valentine's Day was a good one!!! Krista and I had a few things to do in the morning (i.e. Krista had to write the talk that I assigned her...hahaha). But this afternoon we headed out to South Salt Lake where we went to the Cheesecake Factory for dinner. I had called beforehand and found out that they don't do reservations and that we should anticipate a 2-hour wait!

So we decided to get there at about 3:00 in order to eat at 5. In the mean time, we walked around Fashion Place Mall and did a little bit of "harmless window shopping" (to which I say "ya right!") Luckily we got out unscathed (and just as poor as when we went in).

Dinner was Delicious and if anyone is looking for a review of the Cheesecake Factory before they decide to go, We LOVED it!

For this Valentine's Day, Krista and I gave ourselves a 5-dollar budget. I decided to get Krista a big print of a family picture that we took over Christmas break in Parker. Krista got me some shoe laces! I really needed them and I'm really glad she was so observant that I needed them! It was a great Valentines day!

As you may or may not be able to see, Krista got the Shepherd's Pie (it was good, but she told me afterwords wouldn't get it again); and I got a GIGANTIC double cheese burger (it was almost too big to handle; I had to eat it from top to bottom, two bites at a time because it was so tall!)

Over all, Krista and I had SUCH fun Valentine's Day!

Chrstmas In Parker

Well, we spent our first Christmas as a married couple in Parker! It was a lot of fun! We got to see Dan as he got home from his mission, and we played a lot of basketball...(a little bit rusty...)

Here is the only existing clip of Dan walking out of the terminal! My dad (who had the family video camera) was off checking the arrivals board to see when Dan's plane was going to get in...unfortunately, the board was a little late in getting updated and Dan walked out as dad read that Dan's plane was still 10 min. away!

Las Vegas Bowl 2008

This winter we went with the BYU football team to Las Vegas, Nevada to the Pioneer Las Vegas Bowl. We stayed together in the Planet Hollywood Hotell and Casino and had lots of fun!

We went to M&M world and got some BYU M&M's;

As stated above, we enjoyed our nights in the beautiful Planet Hollywood Hotel! This is Krista on her way down the escalator just as we were heading down to the shuttle to the airport. We spent time in Parker with my side of the family for Christmas this year.

We got to eat a special Outback Stake House dinner on Fremont Streetwith the other team . I kept on telling Krista how great she looked; I think you all can agree!

Well, life is going especially well for the Alletto family these days; other than the fact that we are completely stressed out of our minds about finals and studying all day every day so that we can take them before we leave for the Vegas Bowl on Tuesday. As of today, I have taken two and have two more to take, and Krista will be taking all of her tests on Monday and Tuesday.

Adding a little bit of extra cheer and excitement to our lives this past week was the arrival of our new computer! Don't ask me why we decided to buy another distraction right in the middle of the most stressful time of the semester! (Although I can't say that I am not SUPER STOKED about it...).

We both have all of our Christmas shopping done, so that is also helping us to be able to focus. Krista's birthday is on December 29 so we got to celebrate a little bit earlier in lieu of waiting until we are in Colorado. It was really fun; you should ask her what her incredibly thoughtful husband got for her!

We are leaving for the Vegas Bowl on Tuesday and are excited for that. Christmas is around the corner; of course, for the Alletto's the corner is a little bit wider than for most folks this year because we are going to wait to celebrate until the 27th when Dan gets home from his mission. This will be the first Christmas in 2 years that we are all together again!

Holiday Cheer

Well, it is now the Christmas Season (even though I have been hearing Christmas music on the radio since Halloween). Krista and I are trying to finish up with school and get onto the fun part...the bowl game!

Because the bowl game will most likely by played on December 20, we will have to take our finals a week in advance, which is really causing some stress for us right now. But in a couple of weeks we will be really enjoying having an extra week tacked onto the front end of the Christmas holiday.

For now we are expecting (hoping) to go to the Pioneer Las Vegas Bowl. Because of some interesting turns in events, it looks like we may be making a fourth appearance in four years. Whatever happens, it is my opinion that the better the team we play, the more redemption we can get by spanking them. Then Krista and I can head to Colorado for Christa with tranquil minds :)

We are going to go to Colorado for Christmas this year. We spent a very enjoyable five days in Sacramento with the Carpenter family over Thanksgiving break. Some of the highlights were:

Going to Santa Cruz and watching the surfers
Watching the new movie "Twilight" (Krista and I have read the first two books together)
Eating a GREAT Thanksgiving-day feast! Beverly and Kevin have a great way of cooking the turkey--they cook it inside of a plastic bag and upside-down so the juices run down into the meaty part. It was SOOOOO GOOOOD!!!!
Beating Kevin in Wii Tennis. It was a close match, but I think I was the over-all winner :) If you ask him I think he may disagree, but this is the Alletto family blog!

We really enjoyed going to California and spending time with Krista's parents and siblings. They are a great family and we love them!

For Christmas we are planning on going to Colorado (as stated before). My brother, Dan, is returning from Calgary, Canada after serving a very honorable full-time mission. Interesting to note, this will be the first time in about three years that all of the Alletto's will be on the same country. In January of 2006 I was off to Argentina. Shortly thereafter Jean was off to Honduras. Before Jean finished her mission, in January 2007 Dan took off for Canada. I believe we are planning on getting an Alletto family picture when we are in Parker since the reunion will be somewhat short lived. Amy is heading out on her mission to Kiev, Ukraine on January 24! We are all so happy about her choice to serve!

To all of you who think this season was a failure, shut your mouths.

Can it be argued that the BYU football team has failed to live up to everyone's expectations? Absolutely not. since when is a 10-2 regular season record a poor record? Since when is finishing in the top 20 in the nation at the end of the regular season "underachieving?" People who continue to insist that the cougars have failed this season are spoiled rotten and need to take a look at what defines a good team.

In the last 3 seasons BYU has finished the regular season ranked in the BCS top 20, won 2 of the last 3 conference championships, and won 2 bowl games (the next has still yet to be played). The key to having a successful team is consistency. These statistics definitely show the signs of consistency.

Admittedly, entering into the 2008 college football season there were high hopes of a back-to-back-to-back conference championship, as well as a possible BCS-busting run. In order for that to have happened, it would have been necessary to go undefeated (assuming a win against TCU, BYU would still have to beat Utah to have won the conference). Statistically, there is less than a 1% chance that a team will go undefeated in any given season. Why are people so dang depressed that the cougars were unable to produce the second undefeated season in school history? When was the last time that any team has won three consecutive MWC conference championships? Try NEVER. It hasn't been since the streak of 89-93 (when BYU was still in the WAC) that the cougars have put together a 3(or more) year streak of conference championships.

Not to say that BYU couldn't have done it this season, or that we should not hope for such a lofty goal; however, where do people get off believing that the 2008 season was a failure? I remember that coach Mendenhall's first season as head coach was considered a great success when he led the cougars to the first bowl-birth since 2001. That season the Cougars went 6-6, finishing 2nd in the MWC behind Utah.

So lets simmer down a little bit and realize that the "Quest for Perfection" was never even about winning games. Coach Mendenhall made it abundantly clear that it was all about the quest for personal perfection in doing your personal best in every individual situation (eg., drills, weightlifting, etc.). If you thought that "Quest for Perfection" was a statement of going undefeated and wining a national championship, you completely misunderstood the meaning of the slogan.

Should we feel disappointed about losing to Utah? Yes, of course. But this does not mean that the season was a complete failure, nor does it make the bowl game this season any less significant than the bowl games of the last tow seasons which proceeded Mountain West Conference championships.

On October 30, for date night--our date night is on Thursday during the football season to accommodate the fact that football games are played over the weekend--Krista and I had some fun carving pumpkins! We learned something new in the process: pumpkins are sufficiently acidic that any cuts on your fingers and hands start to really BURN!!! that smarts!

don't bother yelling at the reffs; believe me, we try that and it never works (especially through the TV screen)

stay away from any red-colored sports drink to avoid any confusion

even though the other person in the room may be interested in some "channel surfing" during the commercials or the half-time show, DON'T fall into temptation. Watching BYU football requires the highest degree of attention and care. Remember, college football playclock is only 45 seconds long; this is plenty of time to lose your soul for the week, forcing you to experience a great play vicariously through the announcer-tainted replay.
